Ingredients to make Italian Style Salmon
700g / 1 1/2 lb Tartan Quality Mark salmon fillets, skinned
2 x 200g packs of spinach 142ml pot double cream
120g packet freshly grated parmesan cheese
1 tsp freshly grated nutmeg
Directions to make Italian Style Salmon
Step 1:Preheat a grill to a moderate heat.
Step 2:Cut the fillets into 5cm slices. Put to one side whilst preparing the topping.
Step 3:Wash the spinach well, then blanch in boiling water for a minute. Drain and re-fresh under cold water. Squeeze out excess liquid, then finely chop. Combine in a bowl with the double cream, Parmesan and nutmeg.
Step 4:Place the fish fillets in a grill pan and cook for 3 minutes, turn and grill on the other side for 3 minutes. Top with the cheese and spinach mixture and return to the grill and cook until golden. Serve immediately.
