Ingredients to make Almond Fried Shrimp

1 c All purpose flour
1 pn Salt
2 c Milk
4 ea Eggs
12 ea Uncooked jumbo shrimp
1 1/2 c Sliced almonds (5 oz)
6 c Vegetable oil

Directions to make Almond Fried Shrimp

Step 1:Peel, devein and butterfly shrimp, leaving tails intact. Line large baking sheet with waxed paper.
Step 2:Place flour in medium bowl; add salt. Whisk milk and eggs in large bowl. Dredge shrimp (not tails) in seasoned flour; shake off excess. Dip shrimp (not tails) in milk mixture. Press almonds over shrimp, coating all but tails. Place shrimp on prepared sheet. Curl tails up over shrimp. Freeze until firm, about 1 1/2 hours. (Can be prepared up to 1 day ahead. Cover with foil.)
Step 3:Heat oil in heavy large saucepan to 350~. Loosen shrimp from paper. Add frozen shrimp to oil in batches and cook until deep golden brown, about 3 minutes. Transfer to paper towels using slotted spoon. Let drain.

6 Catfish Fillets (about 2 lb)
1/2 c Fresh grated Parmesan cheese
1/4 c Flour
Salt to taste Black pepper to taste
1 ts Paprika
1 Egg, lighty beaten
1 tb Milk
8 tb Butter, melted
1/4 c Sliced almonds

Directions to make Cheesy Baked Catfish

Step 1:

Preheat oven to 350. Wipe the catfish dry. Blend together the cheese, flour, salt, pepper, and paprika. Combine the egg and milk in a flat dish

Step 2:

Dip the fillets in the egg mixture, and then coat with the cheese mixture. Arrange the fillets in one layer in a baking dish, and pour the butter over all. Sprinkle with the almonds.

Step 3:

Place in oven and bake for 20 minutes.

Ingredients to make Cheesy Tuna and Vegetable Bake

6 ounces Egg noodles, cooked al dente, drained
1/2 teaspoon Thyme
1/4 teaspoon Salt
1 10.1/2 ounce can cream of celery soup
1/2 cup Milk
2 – 7ounce cans solid white tuna, drained, flaked
1 cup coarsely chopped celery
1/3 cup Coarsely chopped green pepper
1/3 cup Sliced water chestnuts
1/3 cup Chopped scallions with some green tops
1/2 cup Mayonnaise
3/4 cup Grated sharp Cheddar cheese
1/4 cup Chopped toasted almonds

Directions to make Cheesy Tuna and Vegetable Bake

Step 1:Preheat oven to 425 degrees. In a 2-quart casserole combine noodles, thyme and salt. Set aside.
Step 2:Mix together the soup and milk in a saucepan and heat, stirring constantly until smooth. Add tuna, celery, green pepper, water chestnuts, scallions, mayonnaise and all but 2 Tablespoons of the cheese. Heat and stir until the cheese is melted
Step 3:Add cheese sauce to casserole and mix thoroughly. Sprinkle top with remaining grated cheese and almonds. Bake for about 20 minutes until bubbly and lightly browned.
