Ingredients to make BBQ Halibut and Sauce

1/2 c Cucumber, Shredded
1/2 c Sour Cream
1/4 c Miracle Whip
1 tb Chives, Snipped
2 ts Lemon Juice
1/4 ts Salt
1 ds Pepper
2 lb Halibut, Fresh
1/4 c Butter
1 ts Salt
1/8 ts Pepper
1 Paprika

Directions to make BBQ Halibut and Sauce

Step 1: Blend shredded cucumber with sour cream, Miracle Whip, chives, lemon juice, 1/4 t salt and dash of pepper. Mix well and chill until serving time.
Step 2: Place the halibut in a well greased wire grill basket. In a sauce pan melt the butter. Stir in the 1 t salt and 1/8 t pepper. Grill the halibut over medium-hot coals for 5-8 minutes depending on thickness of steaks. Brush with butter mixture occasionally.
Step 3: Turn and baste with the remaining butter mixture. Grill the halibut until it flakes easily with a fork, 5-8 minutes more.
Step 4: Sprinkle this halibut recipe with paprika and serve with chilled cucumber sauce.

Ingredients to make Healthy Citrus Salsa Haddock

4 navel oranges, peeled and sectioned
1/2 cup chopped red onion
1/4 cup lime juice
1/4 cup minced fresh cilantro or parsley
1/4 teaspoon crushed red pepper flakes
1 garlic clove, minced
1 teaspoon grated orange peel
3/4 teaspoon salt, divided
1 1/8 teaspoons pepper, divided
2 teaspoons ground coriander
2 teaspoons ground cumin
1 pound haddock fillets

Directions to make Healthy Citrus Salsa Haddock

Step 1:For salsa, in a bowl, combine the oranges, onion, lime juice, cilantro, pepper flakes, garlic, orange peel, 1/4 teaspoon salt and 1/8 teaspoon pepper. Cover and chill. Combine coriander, cumin and remaining salt and pepper; rub over both sides of fillets. Grill, covered, over medium-hot heat or broil 4-6 in. from the heat for 5-6 minutes on each side or until fish flakes easily with a fork. Serve with citrus salsa.

28 large shrimp, peeled and deveined
28 sea scallops
1/2 cup butter or margarine
7 tablespoons lemon juice
5 tablespoons Worcestershire sauce
2 teaspoons garlic powder
1 teaspoon paprika

Directions to make Marinated Shrimp and Scallops

Step 1:Place shrimp and scallops in a large resealable plastic bag. In a microwave-safe bowl, combine the butter, lemon juice, Worcestershire sauce, garlic powder and paprika. Microwave at 50% power for 1-1/2 minutes or until butter is melted. Stir to blend; set aside 1/3 cup for basting. Pour remaining marinade over shrimp and scallops. Seal bag and turn to coat; refrigerate for 1 hour, turning occasionally.
Step 2:Drain and discard marinade. Alternately thread shrimp and scallops on metal or soaked wooden skewers.
Step 3:Grill, uncovered, over medium-hot heat for 6 minutes, turning once. Brush with reserved marinade. Grill 8-10 minutes longer or until shrimp turn pink and scallops are opaque.

Ingredients to make Easy Salmon – Asparagus Salad

Maple-Dijon Dressing
1/3 cup maple-flavored syrup
2 tablespoons Dijon mustard
2 tablespoons olive or vegetable oil
Salad
1 salmon fillet, 1/2 inch thick (1 lb)
1 lb asparagus spears
4 cups baby salad greens
1 cup shredded carrots (about 1 1/2 medium)
2 hard-cooked eggs, cut into 8 wedges

Step 1:Heat gas or charcoal grill.
Step 2:In small bowl, mix all Maple-Dijon Dressing ingredients with wire whisk.
Step 3:Cut salmon crosswise into 4 pieces. Brush salmon with 1 tablespoon of the dressing. In large bowl, toss asparagus and 1 tablespoon of the dressing. Place asparagus in grill basket (grill “wok”).
Step 4:When grill is heated, place asparagus and salmon, skin side down, on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook asparagus 7 to 10 minutes and salmon 10 to 15 minutes, shaking grill basket or turning asparagus occasionally, until asparagus is crisp-tender and salmon flakes easily with fork.
Step 5:Slide pancake turner between salmon and skin to remove each piece from skin. On 4 plates, divide salad greens, carrots and eggs. Top with salmon and asparagus. Sprinkle with pepper. Serve with remaining dressing.

Step 1:Submerge untreated cedar plank in water. Soak approximately 12 hours, or overnight.
Step 2:Preheat an outdoor grill for high heat. Place prepared plank on the grill, and sprinkle with coarse salt. Cover grill and heat plank 2 to 3 minutes, until dry. Adjust grill temperature for medium heat.
Step 3:Rub salmon filets with olive oil. Arrange on the plank. Top salmon with red onion, lemon slices and black peppercorns
Step 4:Cook salmon, covered, 10 to 12 minutes, or until opaque and easily flaked with a fork.
