Tilapia with Whole Spices

sfdTilapia with Whole Spices – This whole spiced, oven baked tilapia, comes with a recipe for a succulent pan sauce, that is out of this world. Quickly oven baked, this easy seafood recipe, has next to no prep, and the fork tender fish and sauce go really well with rice and a light salad.

Ingredients to make Tilapia with Whole Spices

2 ts Olive Oil
1 md Carrot, peeled and cut into sticks
4 Green onions, cut into chunks
8 Quarter-size slices ginger, unpeeled
1 ts Whole allspice
3 Star anise pods, broken up
1/2 ts Whole peppercorns
2 sm Dried chiles, any loose seeds removed
2 Tilapia, cleaned and scaled, 2-3 lbs.
Salt and pepper to taste
3 tb White wine
1/2 c Fish or poultry stock
1 tb Butter (optional)

Directions to make Tilapia with Whole Spices

Step 1:  Preheat oven to 400 degrees F. Rub a baking dish well with the oil, add the vegetables and whole spices, and toss to coat them lightly with oil. Arrange in an even layer.
Step 2:  Rinse the fish well inside and out, pat dry, season lightly with salt, and place on top of the vegetables. Add the wine and 3 tablespoons of the stock. Make a loose tent of foil over the tail of the fish and place in the oven. Bake, rotating the pan once halfway through the cooking time, until a skewer easily enters the thickest part of the fish, 25 to 30 minutes. If you have an instant-reading thermometer, it should read 145 degrees F.to 150 degrees F.in the center near the bone.
Step 3:  Transfer the fish to a warm serving platter. Strain the contents of the baking dish into a small saucepan; discard the spices and vegetables. Add the remaining stock, bring to a boil and reduce by a third. Taste for seasoning and adjust if necessary. Swirl in the butter if desired and pour over and around the fish on the platter. Thats all there is to this simple tilapia recipe.

Ingredients to make Best Seafood Bisque

4 lb Whole Lobster
2 tb Olive oil
4 tb Butter
1/2 c Finely chopped onion
1/2 c Finely chopped carrot
1/2 c Finely chopped celery
1/2 ts Dried thyme
1 Bay leaf
3 Cloves finely chopped garlic
2 c Plain tomato sauce, canned is fine
1 c Dry white wine
4 c Chicken broth
2 tb Tomato paste
A dash of hot sauce
2 c Heavy cream
1/4 c Cognac
Salt & fresh ground pepper -to taste

Directions to make Best Seafood Bisque

Step 1:Plunge the lobsters into boiling water for 3-4 min. Take them out of the boiling water and remove the tails. Cut the carcas into quarters, discarding the sacks. Crack the claws. Remove the meat from the tails and set aside.
Step 2:In a large pot melt the butter in the oil and sautee the carrot, onion and celery. When lightly browned, add all other ingredients except the cream and salt and pepper. Bring to a boil and cook for 45 min. Strain into another pot with a fine cheesecloth.
Step 3:Add cream and cook on med low for 10 min. Season with salt and pepper. Take the tail meat and shread it by hand, not too big. Add to the soup. Cook 5 min.on med low.
