Ingredients to make Grilled Fish with Pineapple Cilantro Sauce

1 md Pineapple,@ 2 lb, peeled, cored and -cut into 1 inch chunks
3/4 c Unsweetened Pinapple Juice
2 tb Lime Juice
2 cl Garlic, Minced
1/2 ts To 1 ts Jalapeno Pepper
2 tb Minced Cilantro
1 tb Cornstarch
2 tb Cold water
2 tb To 3 Tb Sweetener
Salt Pepper
6 – 4 oz Halibut, Haddock or Salmon steaks or fillets, grilled

Directions to make Grilled Fish with Pineapple Cilantro Sauce

Step 1:Heat Pineapple, Juices, Garlic and Jalapeno pepper to boiling in a medium saucepan; Reduce heat and simmer, uncovered about 5 minutes. Stir in cilantro; Heat to boiling.
Step 2:Mix Cornstarch and cold water, Stir into boiling mixture. Boil, stiring constantly, until thickened. Remove from heat; Cool 2-3 minutes.
Step 3:Stir in sweetener. Season to taste with salt and pepper. Serve over fish fillets.

1 c Chopped mustard greens OR Swiss Chard
1/2 c Coarsely chopped green pepper
1 lg Red-ripe tomato, cored,quartered
1/4 c Loosely packed chopped cilantro
2 Fresh hot green chiles,stemmed, seeded
2 Garlic cloves, peeled
1 tb Mild olive oil
1/2 ts Ground cumin
1/2 ts Ground coriander
1 tb Dijon-style mustard
1 ts Sugar
1/2 ts Salt, or to taste
1/3 c Heavy cream

**A full recipe of this sauce is enough for about 1 1/2 pounds of cooked fish, seafood or firm cubed tofu.

Directions to make Velvety Warm Mustard Pepper Sauce

Step 1:Place greens, pepper, tomato, cilantro, chiles and garlic in a blender or food processor and process until smoothly pureed. Set aside.
Step 2:Heat oil in a 2-quart saucepan over medium-high heat. Add pureed mixture and cook, stirring constantly, for 5 minutes. Add the remaining ingredients. Bring to a boil, reduce heat to low, cover, and cook until sauce is thick, 12 to 15 minutes.
Step 3:Makes about 2 cups.

3 md Tomato, peeled, diced
2 tb Scallion, chopped
2 tb Cilantro, fresh, chopped
2 tb Jicama, chopped
3 tb Fresh lime juice, divided
1 tb Jalapeno, minced
2 ts Ginger, fresh, chopped
4 Fillet, snapper, (1 pound)
1 c Wine, white, dry

Directions to make Baked Snapper with Ginger Salsa

Step 1:  Salsa: Combine tomatoes, onion, cilantro, jicama, 2 T lime juice, jalapeno and ginger in bowl. Cover and let sit for at least one hour.
Step 2:  Fish: Preheat oven to 425 degrees. Place snapper fillets in a shallow pan and cover with wine and remaining 1 T. lime juice. Cover pan with aluminum foil and bake for 25 minutes or unti fish flakes when poked with a fork. Arrange fish on a serving plate and spoon salsa on top to complete this delicious snapper recipe.
