Ingredients to make Cod Fillets with Cilantro and Lime

2 pounds cod or flounder fillets
1/4 teaspoon pepper
1 tablespoon dried minced onion
1 garlic clove, minced
1 tablespoon olive or vegetable oil
1 1/2 teaspoons ground cumin
1/4 cup minced fresh cilantro or parsley
2 limes, thinly sliced
2 tablespoons reduced-fat margarine, melted

Directions to make Cod Fillets with Cilantro and Lime

Step 1:Place each fillet on a 15-in. x 12-in. piece of heavy-duty foil. Sprinkle with pepper. In a small saucepan, saute onion and garlic in oil; stir in cumin. Spoon over cod fillets; sprinkle with cilantro. Place lime slices over each; drizzle with margarine. Fold foil around fish and seal tightly. Place on a baking sheet. Bake at 375 degrees for 35-40 minutes or until fish flakes easily with a fork. Enjoy this delicious cod recipe!

Ingredients to make Spiced Flounder

4 lb Cod, Flounder, or Sole
8 Cloves garlic
3 Hot chillies
1 Inch ginger
1 md Bunch coriander
1 tb Coriander seeds
1 ts Brown sugar
1 ts Turmeric
1/2 ts Black mustard
1/2 ts Fenugreek seeds
1 tb Salt
1/2 c Lemon juice
1/2 c Vegetable oil
2 c Chopped onion
1 c Chopped tomato
1/2 ts Garam Masala

Directions to make Spiced Flounder

Step 1:Wash and pat dry fish. Sprinkle 1t salt inside and set aside. Preheat oven to 400f. Blend garlic, chili, ginger, 1/2 the corriander, corriander seeds, brown sugar, turmeric, mustard seeds, fenugreek seeds, salt and lemon juice till it all becomes a smooth paste (add some water if needed.)
Step 2:Fry onions till they are soft and golden brown. Add the blended masala and cook till most of the liquid is gone and it starts to leave the sides of the pan. Add the tomatoes and Garam Masala. Fry for 2 minutes more and remove.
Step 3:Coat one side of fish, stuff 1 1/2 cups inside. Close opening, spread the rest of the masala over it. Cover tightly and bake for about 25 minutes. 7. Grill for 1 or 2 minutes in broiler and sprinkle the remaining coriander

Step 1:Cut fish into 1-in. cubes; secure with a toothpick if necessary. Combine cracker crumbs and seasoned salt in a shallow bowl; roll fish in crumb mixture until coated.
Step 2:In an electric skillet or deep-fat fryer, heat oil to 375°. Fry nuggets, a few at a time, for 3 minutes or until browned. Drain on paper towels.

2 tablespoons vegetable oil
1 medium onion, chopped
1 teaspoon garlic paste
1 teaspoon ginger paste
2 teaspoons cumin
2 teaspoons coriander
1 teaspoon cardamom
1/2 teaspoon turmeric
1/2 teaspoon salt
2 fresh jalapeno peppers, seeded and diced
1/4 cup chopped cilantro
1 tablespoon lemon juice
1 (28 ounce) can diced tomatoes with juice
1 pound cod fillets, cut into chunks

Step 1:Heat the oil in a skillet over medium heat. Place onion in the skillet. Reduce heat to low, and cook, stirring often, 15 minutes, or until soft and brown.
Step 2:Mix the garlic paste and ginger paste into the skillet. Cook 1 minute. Mix in cumin, coriander, cardamom, turmeric, and salt. Stir in the jalapeno, cilantro, lemon juice, and tomatoes with juice, scraping up any brown bits from the bottom of the skillet. Bring to a boil. Reduce heat to low, cover, and simmer 20 minutes. If you like, the sauce may be set aside for a few hours at this point to allow the flavors to blend.
Step 3:Return the sauce to a boil, and place cod in the skillet. Reduce heat to low, and cook 15 minutes, or until fish flakes easily with a fork.

2 pounds cod fillets
3 tablespoons margarine
6 tablespoons all-purpose flour
2 cups milk
salt and ground black pepper to taste
1 1/2 cups shredded Cheddar cheese

Step 1:Preheat oven to 350 degrees F (175 degrees C). Grease an 8x 12 inch baking dish. Bring a large pot of lightly salted water to a boil. Add cod fillets and cook for 4 to 6 minutes; drain.
Step 2:Melt margarine in a medium saucepan. Remove from heat and mix in the flour and milk. Return to stove over medium heat, and stir until thickened. Season with salt and pepper.
Step 3:Flake fish into baking dish, alternating layers with sauce. Sprinkle top with shredded cheese.
Step 4:Bake in preheated oven for 20 to 25 minutes, or until cheese is browned.
