2 cups whole milk
1 t herbs de provence
3/4 cup shredded mozzarella cheese
3/4 cup shredded parmesan
3 smashed and chopped garlic cloves

2 T flour

Step 1:

Put milk in crock pot. Stir in the flour. add herbs and garlic, stir again. Put in butter stick and cheese.

Step 2:

Cook Low 4-6 hours. (The butter will separate from the milk and cheese. It will look weird. )

Step 3:

Stir the mixture thoroughly and add your seafood blend or frozen shrimp. Boil pasta according to package directions, toss the alfredo sauce with your hot, drained pasta.

2 1/2 lemons, peeled and quartered
3 tablespoons coarse-ground black pepper
2 tablespoons seafood seasoning
1 cup worcestershire sauce
1 cup water
6 cloves garlic

***SHRIMP***
1/3 cup julienne red bell pepper
1/3 cup julienne poblano pepper
1/3 cup sliced yellow onion
3/4 teaspoon minced garlic
1/2 teaspoon vegetable oil
20 shrimp — 16 to 20 count, peeled,cleaned
3/4 cup barbecue sauce base (see recipe, above)
1/4 cup whipping cream

Step 2:For the Shrimp: In skillet, saute peppers, onion, and garlic in oil on medium he at for about 40 seconds. Add shrimp and saute for 30 seconds. Stir in barbecue sauce base. Add cream and simmer 2 to 3 minutes, until shrimp are cooked.

Ingredients to make Tuna Steak and Black Bean Stir Fry

1 Tuna steak
1 ts Salt
1 ts Finely chopped ginger root
1/4 ts White pepper
1 ts Cornstarch
2 tb Salted black beans
4 Green onions with top
2 ts Green chilies
1 tb Cornstarch
1 tb Water
1 ts Sugar
2 tb Peanut oil
1 tb Peanut oil
2 ts Finely minced garlic
1 c Chicken broth (or fish stock)
Spinach or red-leaf lettuce Leaves

Directions to make Tuna Steak and Black Bean Stir Fry

Step 1:Pat fish dry w. paper towels. Mix salt, ginger & pepper. Coat both sides of fish with mixture and rub 1 tsp. cornstarch on both sides of fish. Cover & refrigerate 30 minutes
Step 2:Place black beans in bowl and cover with warm water. Stir about 2 minutes. Remove and drain. Discard water. Partially pulverize beans. Chinese cooks use the back end of their cleaver handle. Cut 3 of green onions on diagonal into 1 inch pieces, remaining one into thin slices (strings). Remove seeds and membranes from chilies. Cut chilies into very thin slices.
Step 3:Mix 1 Tbs cornstarch, water and sugar. [If grilled fish is preferred, grill on charcoal about 4-5 minutes each side or 10 minutes per inch of thickness, not too close to coals - otherwise fry in wok] Heat wok until hot & add 2 Tbs oil, tilting to coat sides. Fry fish 2 minutes or until brown, turning once. Reduce heat to low, cover and simmer 10 minutes turning after 3 minutes. Uncover & remove from wok.
Step 4:Bring wok back up to very hot over high heat. Add 1 Tbs oil, tilt & coat. Add black beans, chilies, garlic & green onion pieces & stir fry all for 1 minute. Add broth/stock and heat to boiling. Stir in cornstarch/sugar water mixture, stir cooking until thickened. Add fish steaks turning to coat with sauce. Heat 2 minutes. Line platter with spinach/lettuce leaves, place fish on bed and garnish top with green onion slivers.

1 (8-oz.) salmon fillet (about 1-in. thick)
4 c. torn mixed greens
3/4 c. sliced strawberries
10-12 thin cucumber slices, cut into halves
1/8 tsp. coarsely ground black pepper

Step 1:Whish together the first 4 ingredients. Set aside 2 T. juice mixture. Reserve remaining mixture to use as salad dressing.
Step 2:Preheat grill for direct grilling. Grill salmon, skin side down, over medium coals 5 minutes. Turn and grill 5 minutes or until fish flakes easily with a fork, brushing frequently with 2 T. juice concentrate mixture.
Step 3:Cool slightly. Toss together greens, strawberries and cucumber slices. Place on 2 serving plates. Remove skin from salmon. Break salmon into chunks. Arrange salmon on greens mixture. Drizzle with reserved juice concentrate mixture. Sprinkle with pepper.

2 oz White wine
3 c Sorrel or Spinach; fresh, chopped
1 ts Olive oil
1 ts Arrowroot dissolved in
2 ts white wine

Step 1:Saute shallots and leek in 1 ts olive oil lightly or until just clear. Add orange juice and white wine. Bring to boil.
Step 2:Sprinkle fish very lightly with salt and pepper and nestle into pan. Lower heat, cover and poach 4 minutes.

Step 1:In a large skillet, preferable stainless steel or enameled cast iron, bring the water and onion to a boil. Add the milk, salt, and pepper, and add the fish fillets. Reduce the heat and cook for 5 or 6 minutes. Turn off the heat and remove the fillets to a warm platter.
Step 2:Over medium heat, reduce the poaching liquid by half.
Step 3:Meanwhile, prepare the sauce. In a small saucepan, over medium heat, melt the butter. Add the flour and cook for a minute, while whisking, to cook the flour. Whisk in half the cup of poaching liquid. The sauce will thicken immediately.
Step 4:Add the rest of the liquid and whisk well. Add green grapes and return the sauce to a quick boil.

1 pound Fresh filleted porgy, Seabass, in one piece

DIPPING SAUCE:
5 tablespoons Japanese soy sauce, chirizu

GARNISH: 1 2 Inch section of kai (Japanese white radish) or Large icicle radish or white Turnip, peeled — shredded and Soaked in cold water until Ready to use. 1 Carrot; peeled — shredded and Lengthwise — shredded and Soaked in cold water until Ready to use.

**The most important factor in the preparations of “sashimi” is the absolute freshness of the fish. Frozen fish cannot be used. It is best to avoid fresh water fish since they can carry parasites. Step 1:CUTTING the FISH: There are four basic fish cutting methods for sashimi and a very sharp, heavy knife is indispensable to them all.
Step 2:Hira giri (flat cut): This is the most popular shape, suitable for any filleted fish. Holding the fish firmly, cut straight down in slices about 1/4 to 1/2 inch thick and 1 inch wide, depending on the size of the fillet.
Step 3:Kaku giri (cubic cut): This style of cutting is more often used for tuna. Cut the tuna as above (flat cut), then cut the slices into 1/2 inch cubes.
Step 4:Ito zukuri (thread shape): Although this technique may be used with any small fish, it is especially suitable for squid. cut the squid straight down into 1/4 inch slices, then cut lengthwise into 1/4 inch wide strips.
Step 5:Usu zukuri (paper thin slices): Place a fillet of bass or porgy on a flat surface and holding the fish firmly with one hand, slice it on an angle into almost transparent sheets.
