1 md Pineapple,@ 2 lb, peeled, cored and -cut into 1 inch chunks
3/4 c Unsweetened Pinapple Juice
2 tb Lime Juice
2 cl Garlic, Minced
1/2 ts To 1 ts Jalapeno Pepper
2 tb Minced Cilantro
1 tb Cornstarch
2 tb Cold water
2 tb To 3 Tb Sweetener
Salt Pepper
6 – 4 oz Halibut, Haddock or Salmon steaks or fillets, grilled

Directions to make Grilled Fish with Pineapple Cilantro Sauce

Step 1:Heat Pineapple, Juices, Garlic and Jalapeno pepper to boiling in a medium saucepan; Reduce heat and simmer, uncovered about 5 minutes. Stir in cilantro; Heat to boiling.
Step 2:Mix Cornstarch and cold water, Stir into boiling mixture. Boil, stiring constantly, until thickened. Remove from heat; Cool 2-3 minutes.
Step 3:Stir in sweetener. Season to taste with salt and pepper. Serve over fish fillets.

2 lb Catfish fillets
1 t Salt
1 c All-purpose flour
1/4 t Red pepper
1 t Lemon rind, grated
1/2 c Butter
1/4 c Pecans, chopped
1 T Lemon juice
1 T Worcestershire sauce

Directions to make Pecan Sauced Catfish

Step 1:  Make pecan sauce by combining 1/4 C butter, chopped pecans, lemon juice and Worcestershire sauce and blend well. Combine flour, salt, pepper, lemon rind. Roll fillets in mixture, coating well.
Step 2:  Melt 1/4 C butter in large skillet. Brown fillets over medium heat until light brown; turn once to brown both sides. Place fillets in well-greased 12X8X2 baking dish. Sprinkle pecan butter sauce over fillets.
Step 3:  Sprinkle with additional chopped pecans if desires. Bake the catfish recipe uncovered at 350 degrees for 12 minutes or until fish flakes easily when tested with a fork.

1 T Light soy sauce

Directions to make Broiled Spicy Shark

Step 1:Place fish fillets in plastic bag. Add lemon juice, parsley, basil, garlic, chili sauce and soy sauce. Close top of bag and refrigerate for at least one hour, but not longer than 8 hours. Remove fish from bag and save marinade.
Step 2:Place fish onrack of pre-heated broiler about 3 inches from heat and broil for 3-5 minutes. Turn fillets over, brush top with marinade and broil an additional 5-8 minutes until fish flakes or is done to taste.
Step 3:Boil rest of marinade until it’s reduced by half and pour over fillets when serving.

12 ea Ginger, slivered, julienned
4 ts Scallion, white only, shredded
2 tb Soy Sauce
1 tb Chicken Stock
1 pn Pepper, white, ground

1 ds Oil, sesame

Directions to make Steamed Salmon with Black Bean Sauce

Step 1:If fillets are thicker than 1/2 to 5/8 inch, carefully cut in half horizontally (as you would an English muffin). Trim each into a neat 4-inch square. Cut off tops and bottoms of peppers to leave a band about 2 inches wide; remove seeds and ribs. Cut two 4-inch long rectangular pieces from each. Cut into 1/8-inch julienne, leaving pieces grouped in a neat rectangle.
Step 2:Place salmon on an oiled steamer tray or plate. Use a cleaver or knife blade to transfer pepper rectangles to fish, completely covering each fillet. Scatter bamboo shoots over the fish, then sprinkle with black beans, ginger and scallions.
Step 3:In small bowl, stir together soy sauce, chicken stock, white pepper, vegetable oil and sesame oil. Pour mixture over. Steam in covered steamer (making sure that water boils steadily but does not boil away) until just cooked through and opaque, 5 to 8 minutes (timing varies according to thickness of fish). Carefully transfer to serving plate, spoon sauce around and serve immediately.

Step 1:Heat Oven 375F. Add carrots and enough water to cover in saucepan. Bring to full boil & cook over med. heat until carrots are crispy tender (6-8min). Meanwhile, in small bowl combine all ingrediants except fish; set aside.
Step 2:When carrots are done, seperate fish fillets & divide carrots equally among fillets. Wrap each fillets around each portion of carrots. Place fillets, seam down, in 9 inch sq. baking pan (slightly sprayed with cooking spray). Sprinkle fish bundles with stuffing mixture
Step 3:Cover and bake for 10 minutes. Uncover; continue baking for 8-10 more minutes or until fish flakes with fork.

Step 2:Add butter to oil; saute bananas until golden, about 1 minute on each side. Sprinkle bananas with half of lemon juice; remove to serving dish.
Step 3:Saute fish in oil/butter mix until fish comes easily away on a fork, about 3 minutes on each side. Sprinkle with remaining lemon juice. Place on serving dish with bananas. Spoon celery over fish.

Ingredients to make Easy Marinated Miso Seabass

5 tbsp each of shiro miso (Japanese white miso)
5 tbsp sugar.
4 Seabass Fillets (1 1/2 inch thick)
3-4 tbsp of cooking wine to make a paste with the consistency of cake batter.
**If the paste is too thick, add a few drops of water.

Directions to make Easy Marinated Miso Seabass

Step 1:Spread the miso paste mixture all over 1½” thick pieces of seabass, place in a plastic bag or covered container and let marinate in the refrigerator anywhere from overnight to 3 days.
Step 2:When ready to cook, completely rinse the paste off, pat the fish dry, and bake in a 350F oven for about 30 minutes or until the seabass recipe flakes easily with a foek.

Ingredients to make Spicy Tilapia with Dip

4 (4 ounce) fillets tilapia
salt and pepper to taste
1 tablespoon Cajun seasoning, or to taste
1 lemon, thinly sliced
1/4 cup mayonnaise
1/2 cup sour cream
1/8 teaspoon garlic powder
1 teaspoon fresh lemon juice
2 tablespoons chopped fresh dill

Directions to make Spicy Tilapia with Dip

Step 1:Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.
Step 2:Season the tilapia fillets with salt, pepper and Cajun seasoning on both sides. Arrange the seasoned fillets in a single layer in the baking dish. Place a layer of lemon slices over the fish fillets. I usually use about 2 slices on each piece so that it covers most of the surface of the fish.
Step 3:Bake uncovered for 15 to 20 minutes in the preheated oven, or until fish flakes easily with a fork.
Step 4:While the fish is baking, mix together the mayonnaise, sour cream, garlic powder, lemon juice and dill in a small bowl. Serve with tilapia.
