Ingredients to make Crab Filo Appetizers

3 T Butter
2 Cloves garlic, minced
3 T Flour
1 c Whipping cream
1 lb Fresh crab meat
2 T Chopped chives
2 T Chopped parsley
Salt & pepper to taste
8 Filo sheets
1/2 c Unsalted butter

Directions to make Crab Filo Appetizers

Step 1:In 3 Tbls butter, saute garlic, and then stir in the flour and cook for about 1 minute. Add the cream and stir till thick. Stir in crab, chives, salt and pepper.
Step 2:Fold the filo sheets so they are 6inch x 6inch brushing each layer with melted butter. Put a big plop of the crab mixture in the center of each square, and fold into triangles. Seal and brush top with melted butter.
Step 3:Bake at 400~ for 15 to 20 minutes, until they look perfectly browned.

Ingredients to make Poached Haddock

1 cup water
1/2 cup onion, sliced thin
2 cups 2% low-fat milk
1/4 teaspoon sea salt
Pepper
4 ounces Haddock fillet (or other mild fish fillet)

SAUCE:
1 1/2 tablespoons butter
1 1/2 tablespoons flour
1 cup liquid from poaching fish
20 green grapes, optional

**Other Fish Suggestions: Cod, Halibut, Snapper

Directions to make Poached Haddock

Step 1:  In a large skillet, preferable stainless steel or enameled cast iron, bring the water and onion to a boil. Add the milk, salt, and pepper, and add the fish fillets. Reduce the heat and cook for 5 or 6 minutes. Turn off the heat and remove the fillets to a warm platter.
Step 2:  Over medium heat, reduce the poaching liquid by half.
Step 3:  Meanwhile, prepare the sauce. In a small saucepan, over medium heat, melt the butter. Add the flour and cook for a minute, while whisking, to cook the flour. Whisk in half the cup of poaching liquid. The sauce will thicken immediately.
Step 4:  Add the rest of the liquid and whisk well. Add green grapes and return the sauce to a quick boil.

Ingredients to make Almond Fried Shrimp

1 c All purpose flour
1 pn Salt
2 c Milk
4 ea Eggs
12 ea Uncooked jumbo shrimp
1 1/2 c Sliced almonds (5 oz)
6 c Vegetable oil

Directions to make Almond Fried Shrimp

Step 1:Peel, devein and butterfly shrimp, leaving tails intact. Line large baking sheet with waxed paper.
Step 2:Place flour in medium bowl; add salt. Whisk milk and eggs in large bowl. Dredge shrimp (not tails) in seasoned flour; shake off excess. Dip shrimp (not tails) in milk mixture. Press almonds over shrimp, coating all but tails. Place shrimp on prepared sheet. Curl tails up over shrimp. Freeze until firm, about 1 1/2 hours. (Can be prepared up to 1 day ahead. Cover with foil.)
Step 3:Heat oil in heavy large saucepan to 350~. Loosen shrimp from paper. Add frozen shrimp to oil in batches and cook until deep golden brown, about 3 minutes. Transfer to paper towels using slotted spoon. Let drain.

Pecan Sauced Catfish

Ingredients to make Pecan Sauced Catfish

2 lb Catfish fillets
1 t Salt
1 c All-purpose flour
1/4 t Red pepper
1 t Lemon rind, grated
1/2 c Butter
1/4 c Pecans, chopped
1 T Lemon juice
1 T Worcestershire sauce

Directions to make Pecan Sauced Catfish

Step 1:  Make pecan sauce by combining 1/4 C butter, chopped pecans, lemon juice and Worcestershire sauce and blend well. Combine flour, salt, pepper, lemon rind. Roll fillets in mixture, coating well.
Step 2:  Melt 1/4 C butter in large skillet. Brown fillets over medium heat until light brown; turn once to brown both sides. Place fillets in well-greased 12X8X2 baking dish. Sprinkle pecan butter sauce over fillets.
Step 3:  Sprinkle with additional chopped pecans if desires. Bake the catfish recipe uncovered at 350 degrees for 12 minutes or until fish flakes easily when tested with a fork.
