2 Green onions, sliced
3 tb Butter
3 tb Flour
1/2 ts Salt
1/8 ts Cayenne
1 1/2 c Half and half
3 tb Dry white wine
1/2 c Cooked lobster
1/2 c Cooked clams, minced
Pastry shells
1 cn Mushrooms (4 1/2oz) drained

Directions to make Creamed Lobster and Clams

Step 1:

In a saucepan, saute onion in butter until tender. Blend in flour, salt and cayenne. Add the half and half all at once. Cook, stirring constantly, until mixture is thick and bubbly

Step 2:

Add the wine, clams, lobster and button mushrooms. Heat through and serve in warm pastry shells.

Ingredients to make Supreme Beef Tenderloin and Lobster

3 whole lobster tails
4 pounds beef tenderloin filet
1 cup butter
2 teaspoons lemon juice
1 teaspoon garlic powder
3 cups white wine
1/4 cup olive oil
1 tablespoon cracked black pepper
1 teaspoon garlic salt

Directions to make Supreme Beef Tenderloin and Lobster

Step 1:Preheat oven to 425 degrees F (220 degrees C). Bring a large pot of water to a boil. Add lobster tails, and cook for 5 to 6 minutes. Remove from water, rinse and remove shells. Cut tail meat in half lengthwise. Cut tenderloin lengthwise, to within 3/4 inch of the bottom. Fill center of meat with lobster tails.
Step 2:In a saucepan, melt butter with lemon juice, garlic powder and 1 cup of the wine. Drizzle about 1/4 of the butter mixture over the lobster. Tie the tenderloin with kitchen string. Rub tenderloin with olive oil and place in a roasting pan. Pour remaining wine in bottom of pan. Sprinkle with cracked pepper.
Step 3:Bake in preheated oven for 45 minutes to 1 hour. Stir garlic salt into remaining butter mixture, and serve with slices of roast.

1 1/2 c Fusilli Pasta; Cooked And Drained
1/4 c Fresh Parsley,,Chopped
1/2 ts Dried Basil, Crushed
12 oz Jarlsberg Cheese,Shredded

Directions to make Cheesy Seafood Cioppino

Step 1:In a large saucepan, brown the sausage in the oil. Add the onion, Green Pepper, and garlic. Cook and stir until the onion is transparent.
Step 2:Add the beef broth, tomatoes with the juice, tomato sauce, wine, shrimp, zucchini, carrots and celery. Simmer until the vegetables are tender and the shrimp is cooked, about 10 minutes. Add the lobster, pasta, parsley, basil, cooking until heated through.
Step 3:TO SERVE: Spoon the soup into 8 individual ovenproof crocks. Evenly top each with the cheese. Broil, 4 to 5-inches from the heat source, until the cheese is melted and lightly browned.

1 pound lobster tail
1 pound sole fillets
1 pound medium shrimp – peeled and deveined
3 tablespoons lemon juice
1/4 cup olive oil
3 cloves garlic, minced
1 large onion, sliced
1 (15 ounce) can whole tomatoes
1 cup balsamic vinegar
3 cups red wine
2 quarts water
2 sprigs fresh basil leaves, torn
3 tablespoons chopped fresh parsley
salt and pepper to taste

Step 1:Cut the lobster and sole into 1 inch chunks. Toss the lobster and sole with the shrimp and lemon juice, set aside.
Step 2:Heat the olive oil in a large pot over medium heat. Add the garlic and onions; cook and stir until translucent. Pour in the tomatoes, vinegar, and wine; bring to a simmer and cook for about 10 minutes. Pour in water; add the marinated fish, basil, and parsley; simmer for about 30 minutes, until the lobster has cooked through. Season to taste with salt and pepper.

Ingredients to make Spanish Style Lobster

4 large fresh poblano chile peppers
4 lobster tails
4 tablespoons butter, divided
1/2 small sweet onion, minced
4 cloves garlic, minced
1 egg, beaten

Directions to make Spanish Style Lobster

Step 1:Roast the poblano peppers whole over a hot grill, under a broiler or on a gas stove flame, turning frequently until evenly blackened. Place in a bowl when done, and cover. Leave them to sweat for about 10 minutes to loosen the burnt skin. When cool enough to handle, peel the skin off by rubbing with your hands, leaving the chilies intact. Rinse off the peppers. Cut a slit down one side and open to remove the seeds and stem. Set aside.
Step 2:Bring a large pot of water to a rolling boil. Add the lobster tails and cook for about 10 minutes, until bright red. Drain and cool slightly. Cut the shell lenghtwise and remove the tail meat in one piece. Set aside.
Step 3:Melt 2 tablespoons of the butter in a skillet over medium heat. Add onion and garlic; cook and stir until tender and golden.
Step 4:Slit the lobster tails lengthwise about halfway through. Fill the pocket with sauteed onion and garlic. Wrap each tail in one of the peppers so that the openings do not match up. Dip in egg to seal.
Step 5:Heat the remaining butter in the same skillet over medium-high heat. Place the stuffed peppers in the pan with the seam side down to seal. Fry on each side just until golden. Serve immediately.

Ingredients to make Italian Lovers Lobster and Pasta

1 large (2 pound) fresh lobster
3 tablespoons butter
1 large onion, chopped
3 cloves garlic, chopped
1 (28 ounce) can diced tomatoes
4 tablespoons olive oil
4 teaspoons salt
1 teaspoon ground black pepper
1 tablespoon ground cinnamon
1 cup heavy cream
1 (12 ounce) package dried spaghetti
1 tablespoon butter
1 clove garlic, minced
1 bunch fresh parsley, chopped

Directions to make Italian Lovers Lobster and Pasta

Step 1:Bring a large pot of water to a boil. Add the lobster and cook for 6 to 8 minutes, until bright red.
Step 2:As soon as the lobster starts cooking, melt 3 tablespoons of butter in a large skillet over medium heat. Add the onion and 3 cloves of garlic. Cook and stir just to release the liquid. Do not let them brown.
Step 3:When the lobster comes out of the pot, place it on a cutting board and use a big knife to cut it in half lengthwise. Place the halves meaty side down into the skillet with the onion and garlic. Cook for about 3 minutes.
Step 4:Bring another pot of water to a boil and season with a little salt. Add the spaghetti and cook for 8 minutes, or until tender. If you want to save time and a pot, you could boil the pasta in the lobster water since it is already boiling, just add salt.
Step 5:Add the tomatoes to the skillet and turn the heat up to high to bring to a boil. Add the olive oil, salt, pepper and cinnamon. Cook, stirring constantly for 5 to 7 minutes. Slowly pour in the cream, stirring constantly. The sauce will become a nice pink color. (Take a sniff, mmmmmmmm.) Turn the heat down to medium-low. Keep warm, stirring occasionally until the pasta is done.
Step 6:Drain the spaghetti and place on a large serving plate. Stir in the remaining butter and garlic. Pour the tomato sauce over the spaghetti and arrange the two lobster halves in the center. Sprinkle all over with parsley and serve.
