Ingredients to make Patchwork Salmon Salad

1/4 c. frozen orange juice concentrate, thawed
1 T. + 1-1/2 tsp. white wine vinegar or cider vinegar
1 T. chopped fresh basil OR 1 tsp. dried basil leaves
1-1/2 tsp. olive oil
1 (8-oz.) salmon fillet (about 1-in. thick)
4 c. torn mixed greens
3/4 c. sliced strawberries
10-12 thin cucumber slices, cut into halves
1/8 tsp. coarsely ground black pepper

Directions to make Patchwork Salmon Salad

Step 1:Whish together the first 4 ingredients. Set aside 2 T. juice mixture. Reserve remaining mixture to use as salad dressing.
Step 2:Preheat grill for direct grilling. Grill salmon, skin side down, over medium coals 5 minutes. Turn and grill 5 minutes or until fish flakes easily with a fork, brushing frequently with 2 T. juice concentrate mixture.
Step 3:Cool slightly. Toss together greens, strawberries and cucumber slices. Place on 2 serving plates. Remove skin from salmon. Break salmon into chunks. Arrange salmon on greens mixture. Drizzle with reserved juice concentrate mixture. Sprinkle with pepper.

Ingredients to make Fruit and Prawn Salad

1/2 Medium-size avocado
1/2 ts Lemon juice
1 Medium-size, ripe seasonal melon
1 Celery heart, chopped
4 oz Strawberries, hulled, sliced
8 oz Cooked, peeled prawns
2 Little Gem lettuces, rinsed, torn

**DRESSING:
8 oz Strawberries
1 ts Caster sugar
2 ts Olive oil
1 tb Unsweetened orange juice
2 ts Chopped fresh parsley
Salt and freshly ground black pepper

Directions to make Fruit and Prawn Salad

Step 1:Peel and chop the avocado and place it in a mixing bowl. Sprinkle it with the lemon juice to prevent it from discolouring. Halve the melon, discard the seeds and scoop out the flesh using a melon baller (or cut it into cubes).
Step 2:Gently combine the melon, chopped celery, strawberries and prawns with the avocado and refrigerate until needed.
Step 3:Meanwhile, puree the dressing ingredients in a food processor or liquidiser.
Step 4:Arrange the lettuce on 4 plates and divide the prawn mixture between them. Pour the dressing over and serve immediately.

Ingredients to make Citrus Shrimp and Scallops

1/2 lb Fresh or frozen Scallops
1 ts Finely shredded Orange Peel
1/2 c Orange juice
2 tb Soy Sauce
1 ts Grated Gingerroot
1 x Clove garlic, minced
1/4 ts Ground Red Pepper
12 x Fresh or frozen Pea Pods
1 x Orange, cut in 8 wedges
12 fresh or frozen large Shrimp, peeled and deveined (about 1/2 lb total)

Directions to make Citrus Shrimp and Scallops

Step 1:Halve any large scallops. Place scallops and shrimp in a plastic bag set in a deep bowl. For marinade, combine orange peel, orange juice, soy sauce, gingeroot, garlic, and red pepper. Pour over seafood. Seal bag. Marinate in the refrigerator 30 minutes. Drain, reserving marinade.
Step 2:If using fresh pea pods, cook in boiling water about 2 minutes; drain. Or, thaw and drain frozen pea pods. Wrap 1 pea pod around each shrimp. Thread pea pods and shrimp onto four 10-12 skewers alternately with scallops and orange wedges.
Step 3:Grill kabobs on an uncovered grill directly over medium-hot coals for 5 minutes. Turn and brush with marinade. Grill 5-7 minutes more or till shrimp turn pink and scallops are opaque. Brush occasionally with marinade
Step 4:Broil 4 inches from the heat for 4 minutes. Turn and broil 4-6 minutes more or till shrimp turn pink and scallops are opaque. Brush occasionally with marinade
