 Supreme Shrimp Scampi – This supreme shrimp scampi, seafood recipe is a fiesta for your tastebuds! The marinade for this one really packs a punch and is so quick and easy to make for so much astonishing flavor. We included instructions for two ways of cooking these satisfying shrimp, either option is truly delicious!

Ingredients to make Supreme Shrimp Scampi

1 small clov garlic, minced
2 tablespoons minced parsley
1/2 large white onion, minced
1 dash Tabasco sauce
1/2 cup cooking oil
1/4 cup lemon juice
1/2 cup dry white wine or apple juice
12 large shrimp, peeled with tails
Unflavored breadcrumbs
Melted Butter

** Note: Use Tabasco sauce in place of pepper; it blends better with other ingredients. Use only white bread crumbs, brown crumbs or crusts will brown too fast during cooking.

*** See step 4 for alternate cooking method.

Directions to make Supreme Shrimp Scampi

Step 1:Combine first 7 ingredients. Marinate shrimp overnight in mixture.
Step 2:Remove shrimp from marinade. Immediately roll, undrained, in breadcrumbs. Place on combination broiling and serving platter. Dribble melted butter over shrimp. Add marinade to 1/8 in. in bottom of broiler pan.
Step 3:Broil slowly on low heat until done.
Step 4:*** Alternative method of preparation: Saute shrimp in combination of half butter and half cooking oil. When done, remove from skillet. Reduce marinade in skillet, pour over shrimp and serve.

Ingredients to make Cast Iron Clams

36 steamer clams, cleaned
1 cup coconut milk
1/2 cup clam juice
1/4 cup fresh lime juice
1 teaspoon minced fresh ginger
1/4 cup chopped cilantro
2 teaspoons red pepper flakes

Directions to make Cast Iron Clams

Step 1:Prepare a wood or charcoal fire and let it burn down to embers. Place a cast iron skillet on the grill and allow it to heat up to almost smoking.
Step 2:In a large mixing bowl combine all ingredients except steamers and mix well. Season to taste with salt and freshly ground pepper. Pour this mixture into the heated cast iron skillet and let it reduce by half.
Step 3:Add steamers and cook until all steamers are open, approximately 2 to 3 minutes. Discard any steamers that do not open. Serve immediately.

Ingredients to make Cod and Shrimp With Tomato

2 tablespoons olive oil
6 cloves garlic, minced
5 large tomatoes, chopped
1 teaspoon dried oregano
1 pound Alaskan cod
1/2 pound large shrimp, peeled and deveined
salt to taste
1 tablespoon dried oregano

Directions to make Cod and Shrimp With Tomato

Step 1:Heat the olive oil in a skillet over medium-high heat; cook and stir the garlic in the oil until golden brown; add the tomatoes and mix well until juicy; stir in 1 teaspoon oregano. Lie the cod and shrimp into the mixture; season with salt; cover and simmer 3 minutes. Flip the cod and season again with salt and 1 tablespoon oregano; re-cover and cook another 3 minutes. Remove the cover and allow to cook until the juice evaporates slightly, 2 to 3 minutes.

Ingredients to make Spicy Cajun Snapper

1 teaspoon paprika
1/4 teaspoon ground cayenne pepper
1 teaspoon ground black pepper
1/2 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon garlic powder
1/4 teaspoon dried oregano
2 tablespoons butter
1 tablespoon olive oil
6 (6 ounce) fillets red snapper
salt to taste

Directions to make Spicy Cajun Snapper

Step 1:On a large piece of wax paper, mix together paprika, cayenne pepper, black pepper, onion powder, thyme, basil, garlic powder, and oregano.
Step 2:In a small saucepan, over medium heat, melt butter or margarine with oil. Brush both sides of the snapper filets with the butter mixture, reserve the remaining butter mixture. Coat both sides of the filets with the seasoning-mixture.
Step 3:Heat a large cast-iron skillet over high heat until a drop of water sizzles on it. Drizzle half of the remaining butter-oil mixture on one side of fish fillets. Place fillets butter side down in pan. Cook over a high heat until the fish is deeply browned, about 5 minutes. Drizzle remaining butter-mixture over the fish and flip the fish over. Cook until fish is browned and flakes when tested with a fork, about 5 minutes more. Season to taste with salt.

Ingredients to make Sweet and Sour Glazed Mahi Mahi

3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or to taste
2 teaspoons olive oil
4 (6 ounce) mahi mahi fillets
salt and pepper to taste
1 tablespoon vegetable oil

Directions to make Sweet and Sour Glazed Mahi Mahi

Step 1:In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
Step 2:Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
Step 3:Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.
