Ingredients to make Baked Smoked Salmon and Feta

3 oz Smoked salmon, diced
6 oz Cream cheese, softened
3 oz Feta cheese
1 Egg, slightly beaten
1 t Capers
2 tb Finely chopped parsley
4 Scallions, topped, diced
1 tb (or more) poppyseeds
1 frozen pastry sheet, cut into a 3 X inch rectangle and some melted butter.

Directions to make Baked Smoked Salmon and Feta

Step 1:Preheat the oven to 375 degrees. In a medium bowl, hand mix the salmon, cream cheese, Feta cheese, egg, capers, parsley, and scallions.
Step 2:Roll out the pastry sheet to double its size. Liberally brush it with melted butter. Spread the salmon mixture over the sheet. Roll up, jelly-roll style, folding the ends in to seal. Brush the top of the roll with melted butter and sprinkle with poppy seeds.
Step 3:Make 1/2 inch deep diagonal slashes across the roll to allow steam to escape. Bake the roll for 20 to 30 minutes or until golden.

2 tablespoons butter
1 tablespoon olive oil
1 cup chopped onion
2 cloves garlic, chopped
1/2 cup chopped celery
1/2 cup all-purpose flour
6 cups chicken broth or vegetable broth
1 pound potatoes – peeled and cubed
1 teaspoon dried dill weed
1 teaspoon dried tarragon
1 teaspoon dried thyme
1/2 teaspoon paprika
8 ounces smoked salmon, cut into 1/2 inch pieces
1/4 cup white wine
1 tablespoon fresh lemon juice
1/4 teaspoon hot sauce
1 teaspoon salt

Step 1:In a large stockpot over medium-high heat, combine the butter, olive oil, onion, garlic, and celery. Cook 8 to 10 minutes, or until the onions are transparent. Sprinkle flour over the mixture and stir well to make a dry roux. Gradually add the chicken broth and stir until slightly thickened. Stir in the potatoes, dill, tarragon, thyme, and paprika. Reduce heat to medium, cover, and simmer for 15 minutes.
Step 2:Stir in the salmon, wine, lemon juice, hot sauce, salt, and pepper. Simmer over low heat, uncovered for 10 minutes.
Step 3:Mix in the half-and-half and continue to simmer for 30 minutes, stirring occasionally. Do not let the chowder boil after adding the half-and-half. Serve hot.

Ingredients to make Easy Cedar Planked Salmon

24x8x1 inch untreated cedar plank
6 (4 ounce) fillets salmon
1/2 cup extra virgin olive oil
1 large red onion, chopped
1 lemon, sliced
1/2 tablespoon black peppercorns, crushed

Directions to make Easy Cedar Planked Salmon

Step 1:Submerge untreated cedar plank in water. Soak approximately 12 hours, or overnight.
Step 2:Preheat an outdoor grill for high heat. Place prepared plank on the grill, and sprinkle with coarse salt. Cover grill and heat plank 2 to 3 minutes, until dry. Adjust grill temperature for medium heat.
Step 3:Rub salmon filets with olive oil. Arrange on the plank. Top salmon with red onion, lemon slices and black peppercorns
Step 4:Cook salmon, covered, 10 to 12 minutes, or until opaque and easily flaked with a fork.

Ingredients to make Smoked Salmon Caper

4oz/125g smoked salmon
Sliced white or brown bread
1oz/25g butter
1-2 teasp capers
cayenne pepper
freshly ground black pepper
chopped parsley

Directions to make Smoked Salmon Caper

Step 1:Finely chop the smoked salmon and capers and mix together
Step 2:Melt the butter in a saucepan, add the smoked salmon and capers, season with a little black pepper and cayenne (to taste). Mix well and leave to get cold.
Step 3:Cut the crusts of the bread and then cut each slice into either 4 triangles or rectangles. Either brush with melted butter or olive oil and spread out on a baking tray.
Step 4:Bake in a hot oven until golden brown and crisp. Take out and leave to cool.
Step 5:When ready to serve pile a little heap of the smoked salmon recipe on top of each croute and sprinkle with some chopped parsley.
