Ingredients to make BBQ Snapper and Sauce

2 small poblano chilies, charred, seeded, peeled
1 tbls olive oil
Salt and pepper to taste
1/4 cup pumpkin seeds OR 1/4 cup pine nuts, ground, toasted
1/4 cup heavy cream
1/4 cup basil leaves, chopped
1 clove garlic, chopped
3 tbls shallots,chopped
1 tsp lime zest, chopeed
1/2 cup chicken stock
2 tbls lime juice
4 fillets red snapper

Directions to make BBQ Snapper and Sauce

Step 1:Preheat a grill or broiler. Combine the chilies, pumpkin seeds, garlic, shallots and chicken stock in a blender. Puree for about 30 seconds. Transfer the puree to a saucepan. Bring to a boil. Set aside.
Step 2:Lightly brush the snapper fillets with the olive oil. Sprinkle with salt and pepper. Grill or broil the fillets 3 to 4 minutes on each side or until fish flakes easily.
Step 3:Just before serving, add the cream, basil, lime zest, juice and salt and pepper to the sauce. Simmer 3 to 4 minutes. Spoon the sauce onto the dinner plates. Top with the fish

1 1/2 cup(s) low-fat plain yogurt
2 teaspoon(s) garlic paste
2 teaspoon(s) grated fresh ginger
2 1/2 teaspoon(s) paprika
1 teaspoon(s) curry powder
1 teaspoon(s) red chili powder
1 teaspoon(s) ground cumin
1/2 teaspoon(s) salt
4 (6-ounce) 3/4-inch-thick tilapia, snapper, or mahimahi fillets

Directions to make Grilled Tandoori Fish

Step 1:In a large bowl, whisk together yogurt, garlic paste, ginger, paprika, curry powder, chili powder, cumin, and salt. Remove 1 cup of the mixture to a bowl and reserve for serving. Place fillets in a shallow dish and brush with remaining yogurt mixture to coat completely. Cover and refrigerate 1 hour.
Step 2:Heat an outdoor gas grill, or prepare coals for a charcoal grill for direct grilling over medium-high heat. Remove fillets from marinade; wipe off excess marinade. Brush the cooking grates clean and oil the grill rack. Lightly brush fillets with oil. Grill fillets (keeping the grill lid closed as much as possible) until fish is opaque and still moist, 6 to 8 minutes, carefully turning fillets once when fish releases easily from grill pan.
Step 3:Serve with remaining yogurt mixture.

Ingredients to make Baked Fish and Vegetables

1 Whole red snapper,(2 lb)

1 Whole sea bass or fillets
Salt, pepper
2 1/2 Lemons, halved
1 bn Fresh fennel leaves OR 2 ts Fennel seed
1/2 c Butter or margarine
1 Onion, thinly sliced
2 md Potatoes, peeled, very thinly sliced
2 Tomatoes, peeled and quartered
1/2 c White wine
3 tb Pernod
Parsley, chopped

Directions to make Baked Fish and Vegetables

Step 1:Season fish inside and out with salt and pepper to taste and juice of 1/2 lemon. If fillets are used, sprinkle both sides with salt, pepper and lemon juice. Place fennel leaves or seeds inside fish or sprinkle over fillets. Melt butter in large skillet. Brown fish on both sides. Transfer fish and juices to 13- x 9-inch baking pan.
Step 2:Arrange onion and potato slices around fish and bake at 375F 30 minutes. Add tomatoes, pour wine over fish and sprinkle with Pernod. Bake 10 minutes longer or until fish flakes easily with fork and potatoes are done.
Step 3:Serve from baking dish or arrange fish on large platter with tomatoes, potatoes and onions. Pour juices over fish and sprinkle with parsley. Garnish with remaining lemon halves.

Ingredients to make Creamy Snapper and Linguine

2 tablespoons olive oil
4 shallots, thinly sliced
2 cloves garlic, minced
1/2 cup vodka
1/2 cup lemon juice
1 tablespoon lime juice
1/4 cup fish sauce
2 tablespoons chopped sun-dried tomatoes
1 teaspoon fennel seeds, crushed
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon Worcestershire sauce
1/2 teaspoon grated orange zest
3/4 cup whipping cream
1 (8 ounce) package linguine pasta
4 (6 ounce) red snapper fillets
salt and pepper to taste
1/4 cup all-purpose flour
2 tablespoons olive oil
1/4 teaspoon grated orange zest

Step 1:Heat 2 tablespoons of olive oil in a saucepan over medium-high heat. Stir in the shallot and garlic, and cook for 30 seconds. Pour in the vodka, and simmer for 1 minute. Add the lemon juice, lime juice, fish sauce, sun-dried tomatoes, fennel seeds, basil, thyme, Worcestershire sauce, 1/2 teaspoon orange zest, and cream. Bring to a simmer, then reduce the heat to medium-low, and continue to simmer until the sauce has reduced by half, 10 to 15 minutes.
Step 2:Bring a large pot of lightly salted water to a boil. Add the linguine, and cook until al dente, 8 to 10 minutes; drain.
Step 3:Meanwhile, season the snapper fillets with salt and pepper, then dredge in the flour. Shake off the excess, and set aside. Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Cook the snapper fillets on both sides in the hot oil until nicely browned, and no longer transparent in the center, about 4 minutes per side.
Step 4:To serve, toss the drained linguine with half of the sauce, and divide onto 4 plates. Place a snapper fillet onto each plate, and ladle on the remaining sauce. Sprinkle with 1/4 teaspoon orange zest to garnish.

3 tablespoons butter
3/4 cup fresh bread crumbs
1/4 cup chopped green onions
1/4 cup celery, diced
1 clove garlic, minced
4 ounces cooked shrimp
4 ounces cooked crabmeat

1/8 teaspoon salt

Directions to make Grilled Red Snapper

Step 1:Preheat coals in a covered grill to high heat.
Step 2:To Make Stuffing: Melt 2 tablespoons butter or margarine in a skillet. Add the bread crumbs. Saute and stir the mixture over medium-high heat till the bread crumbs are browned. Remove the bread crumbs to a mixing bowl.
Step 3:Melt 1 tablespoon butter or margarine in the skillet and saute the onions, celery and garlic until tender; add to bread crumbs in mixing bowl, then stir in shrimp, crab, parsley, salt and pepper and toss gently.
Step 4:Cut foil to form a double-thickness 18×12-inch rectangle. Lay the fish fillets on the double thickness of foil. Mound the stuffing on top of the fillets.
Step 5:Curl up the edges of the foil to form a tray. In a covered grill, arrange the preheated coals at either side of the grill. Test for medium heat above the center of the grill. Place the fish in foil in the center of the grill rack. Cover and grill for 20 to 25 minutes or just until the fish flakes easily.

Directions to make Spicy Cajun Snapper

Step 1:On a large piece of wax paper, mix together paprika, cayenne pepper, black pepper, onion powder, thyme, basil, garlic powder, and oregano.
Step 2:In a small saucepan, over medium heat, melt butter or margarine with oil. Brush both sides of the snapper filets with the butter mixture, reserve the remaining butter mixture. Coat both sides of the filets with the seasoning-mixture.
Step 3:Heat a large cast-iron skillet over high heat until a drop of water sizzles on it. Drizzle half of the remaining butter-oil mixture on one side of fish fillets. Place fillets butter side down in pan. Cook over a high heat until the fish is deeply browned, about 5 minutes. Drizzle remaining butter-mixture over the fish and flip the fish over. Cook until fish is browned and flakes when tested with a fork, about 5 minutes more. Season to taste with salt.
