Ingredients to make Barbeque Creole Shrimp

***BBQ Shrimp Base***
2 1/2 lemons, peeled and quartered
3 tablespoons coarse-ground black pepper
2 tablespoons seafood seasoning
1 cup worcestershire sauce
1 cup water
6 cloves garlic

***SHRIMP***
1/3 cup julienne red bell pepper
1/3 cup julienne poblano pepper
1/3 cup sliced yellow onion
3/4 teaspoon minced garlic
1/2 teaspoon vegetable oil
20 shrimp — 16 to 20 count, peeled,cleaned
3/4 cup barbecue sauce base (see recipe, above)
1/4 cup whipping cream

Directions to make Barbeque Creole Shrimp

Step 1:For the Sauce Base: In saucepan combine all ingredients and reduce liquid by half. Strain liquid through fine-mesh strainer and reserve.
Step 2:For the Shrimp: In skillet, saute peppers, onion, and garlic in oil on medium he at for about 40 seconds. Add shrimp and saute for 30 seconds. Stir in barbecue sauce base. Add cream and simmer 2 to 3 minutes, until shrimp are cooked.

Ingredients to make Sunshine Poached Fish

1 lb Fish filet, flounder, tilapia, etc
Salt & pepper to taste
1 c Fresh squeezed orange juice
1 tb Lemon juice
1 Shallot; chopped
1 Leek; halved, sliced thin
2 oz White wine
3 c Sorrel or Spinach; fresh, chopped
1 ts Olive oil
1 ts Arrowroot dissolved in
2 ts white wine

Directions to make Sunshine Poached Fish

Step 1:Saute shallots and leek in 1 ts olive oil lightly or until just clear. Add orange juice and white wine. Bring to boil.
Step 2:Sprinkle fish very lightly with salt and pepper and nestle into pan. Lower heat, cover and poach 4 minutes.

Step 4:Remove fish and spinach to warm plates. Thicken sauce with arrowroot dissolved in white wine.

Directions to make Poached Haddock

Step 1:In a large skillet, preferable stainless steel or enameled cast iron, bring the water and onion to a boil. Add the milk, salt, and pepper, and add the fish fillets. Reduce the heat and cook for 5 or 6 minutes. Turn off the heat and remove the fillets to a warm platter.
Step 2:Over medium heat, reduce the poaching liquid by half.
Step 3:Meanwhile, prepare the sauce. In a small saucepan, over medium heat, melt the butter. Add the flour and cook for a minute, while whisking, to cook the flour. Whisk in half the cup of poaching liquid. The sauce will thicken immediately.
Step 4:Add the rest of the liquid and whisk well. Add green grapes and return the sauce to a quick boil.

Step 1:Steam clams in 1 qt. water in large kettle. Re- serve liquid to use as clam stock. Dice the clams. Cook the potatoes separately in 2 cups of boiling water for 5-10 min. Drain.
Step 2:In a large pot,saute the onion, peppers, celery, & paprika in butter until the vegetables are tender, about 6 min. Add flour and Accent,stirring well so that mixture does not brown. Add clam stock, clam base, potatoes, & clams. Allow to simmer for 15 min.
Step 3:Add tomatoes & simmer for 5-10 min., covered. Serve.

Ingredients to make Pepper Oysters

24 ea Oysters, fresh
2 tb Peppercorns, black
3 lg Garlic, cloves, peeled
1/2 ts Salt
3 tb Oil, olive
3 ea Bay leaves
2 tb Juice, lime, fresh

Directions to make Pepper Oysters

Step 1:Shuck the oysters and reserve their shells and juice. Put the oyster juice into a hot saute pan and bring it to a boil. Add the oysters and poach gently 2 - 3 minutes until their edges curl slightly. Remove oysters from the saute pan and reserve.
Step 2:Put the peppercorns, garlic, and salt in a mortar and grind the mixture to a rough paste. Add a 1/2 cup of hot oyster juice to the mortar and continue to grind.
Step 3:Add olive oil and bay leaves to the liquid in the pan and bring the mixture to a boil. Blend in the mixture from the mortar, then return the oysters to the pan and heat very briefly. Remove the pan from the heat and add the lime juice. Turn out onto serving plates and pour some sauce over the oysters. Serve cold or at room temperature.
