sfd Sunshine Poached Fish - This simple yet irresistable seafood recipe for poached tilapia, or other white fish, has the addition of spinach and citrus. Very versatile, as any firm white fish will work, a sauce is made with the liquid left from poaching, topping it off perfectly!

Ingredients to make Sunshine Poached Fish

1 lb Fish filet, flounder, tilapia, etc
Salt & pepper to taste
1 c Fresh squeezed orange juice
1 tb Lemon juice
1 Shallot; chopped
1 Leek; halved, sliced thin
2 oz White wine
3 c Sorrel or Spinach; fresh, chopped
1 ts Olive oil
1 ts Arrowroot dissolved in
2 ts white wine

Directions to make Sunshine Poached Fish

Step 1:Saute shallots and leek in 1 ts olive oil lightly or until just clear. Add orange juice and white wine. Bring to boil.
Step 2:Sprinkle fish very lightly with salt and pepper and nestle into pan. Lower heat, cover and poach 4 minutes.
Step 3:with salt and pepper and nestle into pan. Lower heat, cover and poach 4 minutes. Add chopped sorrel or spinach, cover and poach another 4 minutes (approximately 8 minutes total should be enough).
Step 4:Remove fish and spinach to warm plates. Thicken sauce with arrowroot dissolved in white wine.

Ingredients to make Grilled Tilapia with Mango Salsa

1/3 cup extra-virgin olive oil

1 tablespoon lemon juice

1 tablespoon minced fresh parsley

1 clove garlic, minced

1 teaspoon dried basil

1 teaspoon ground black pepper

1/2 teaspoon salt

2 (6 ounce) tilapia fillets

1 large ripe mango, peeled, pitted and diced

1/2 red bell pepper, diced

2 tablespoons minced red onion

1 tablespoon chopped fresh cilantro

1 jalapeno pepper, seeded and minced

2 tablespoons lime juice

1 tablespoon lemon juice

salt and pepper to taste

Directions to make Grilled Tilapia with Mango Salsa

Step 1:Whisk together the extra-virgin olive oil, 1 tablespoon lemon juice, parsley, garlic, basil, 1 teaspoon pepper, and 1/2 teaspoon salt in a bowl and pour into a resealable plastic bag. Add the tilapia fillets, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
Step 2:Prepare the mango salsa by combining the mango, red bell pepper, red onion, cilantro, and jalapeno pepper in a bowl. Add the lime juice and 1 tablespoon of lemon juice, and toss well. Season to taste with salt and pepper, and refrigerate until ready to serve.
Step 3:Preheat an outdoor grill for medium-high heat, and lightly oil grate.
Step 4:Remove the tilapia from the marinade, and shake off excess. Discard the remaining marinade. Grill the fillets until the fish is no longer translucent in the center, and flakes easily with a fork, 3 to 4 minutes per side, depending on the thickness of the fillets. Serve the tilapia topped with mango salsa.

Ingredients to make Spicy Tilapia with Dip

4 (4 ounce) fillets tilapia
salt and pepper to taste
1 tablespoon Cajun seasoning, or to taste
1 lemon, thinly sliced
1/4 cup mayonnaise
1/2 cup sour cream
1/8 teaspoon garlic powder
1 teaspoon fresh lemon juice
2 tablespoons chopped fresh dill

Directions to make Spicy Tilapia with Dip

Step 1:Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking dish.
Step 2:Season the tilapia fillets with salt, pepper and Cajun seasoning on both sides. Arrange the seasoned fillets in a single layer in the baking dish. Place a layer of lemon slices over the fish fillets. I usually use about 2 slices on each piece so that it covers most of the surface of the fish.
Step 3:Bake uncovered for 15 to 20 minutes in the preheated oven, or until fish flakes easily with a fork.
Step 4:While the fish is baking, mix together the mayonnaise, sour cream, garlic powder, lemon juice and dill in a small bowl. Serve with tilapia.

Ingredients to make Grilled Tandoori Fish

1 1/2 cup(s) low-fat plain yogurt
2 teaspoon(s) garlic paste
2 teaspoon(s) grated fresh ginger
2 1/2 teaspoon(s) paprika
1 teaspoon(s) curry powder
1 teaspoon(s) red chili powder
1 teaspoon(s) ground cumin
1/2 teaspoon(s) salt
4 (6-ounce) 3/4-inch-thick tilapia, snapper, or mahimahi fillets

Directions to make Grilled Tandoori Fish

Step 1:In a large bowl, whisk together yogurt, garlic paste, ginger, paprika, curry powder, chili powder, cumin, and salt. Remove 1 cup of the mixture to a bowl and reserve for serving. Place fillets in a shallow dish and brush with remaining yogurt mixture to coat completely. Cover and refrigerate 1 hour.
Step 2:Heat an outdoor gas grill, or prepare coals for a charcoal grill for direct grilling over medium-high heat. Remove fillets from marinade; wipe off excess marinade. Brush the cooking grates clean and oil the grill rack. Lightly brush fillets with oil. Grill fillets (keeping the grill lid closed as much as possible) until fish is opaque and still moist, 6 to 8 minutes, carefully turning fillets once when fish releases easily from grill pan.
Step 3:Serve with remaining yogurt mixture.
